Craving an easy 30 minute breakfast or simple dessert? You gotta give this blueberry scone recipe a try! It’s dairy free, can be gluten free, and we opted to add white chocolate chips this time!
Here’s the very easy recipe:
Blueberry Scones
8 tablespoons coconut oil, softened
1 tablespoon vanilla
1/4 cup coconut sugar
1 cup rolled oats
3/4 cup unbleached flour (or two cups almond flour for gf)
Add in options: blueberries, white chips, or other fruit!
Steps:
Preheat oven to 350 degrees.
Mix wet ingredients until well blended in a medium bowl.
Add sugar and oats and mix well. Add flour until everything is well combined. Fold in your mix ins, and shape into a 1 inch round flat ball.
Cut and divide the dough into 6-8 pieces and spread out on parchment paper.
Bake for 25 minutes or until the edges are golden.
Optional icing:
1 cup powdered sugar
1 TBS milk or water
Blend well and pour glazed icing over top cooled scones!
